Coxi Seed Porridge

Ingredients:

50g coix seed (Barley, yi ren)
30g red beans
30g unpolished rice (brown rice)
dash of salt or rock sugar



Method:
  1. Rinse coix seed and red beans. Soak in water for about 2-3 hours.
  2. Rinse unpolished rice and soak in water.
  3. Cook coix seed, red beans and rice in half a pot of water.
  4. Turn down the heat and cook for 2 hours, season with rock sugar or salt.



Tips and info:

  • Red beans and coix seed take a long time to cook, thus it is best to soak well before cooking.
  • This porridge reduces swelling and promotes urination. It is suitable for kids who have bad appetite or suffer skin allergies.
