Hakka Black-Eyed Bean Dumpling


Things you need for wrapping:


Appropriate amound of dumpling leaves (bamboo leaves).

Appropriate amount of raffia strands.



Ingredients:


1 kg glutinous rice

300g black-eyed beans, soaked

500g pork belly, diced

50g dried Chinese mushrooms, soaked


Seasoning for black-eyed beans:


2 tbsp oil

5 shallots, chopped

3 garlic, chopped

1/2 tsp pepper

1/4 tsp five spices powder (wu xiang powder)

1 tsp sugar

1/2 tsp salt


Seasoning for pork:


1/2 tsp pepper

1/4 tsp five spices powder

1 tsp sesame oil

1 tsp dark soy sauce

1 tsp sugar

1 tsp salt



Wrapping:


Soaked the dumpling leaves in hot water and washed.


Method:


  1. Wash glutinous rice, soaked for 4 hours and drain.

  2. Wash the black-eyed beans and soaked till soft. Drain away the water.

  3. Heat oil , stir fry shallots, garlic and the beans till fragrant. Add the beans seasoning.

  4. Season the pork belly with the pork seasoning, mix well and add the Chinese mushrooms.

  5. Add 1 tbsp of salt and 2 tbsp of oil and mix into glutinous rice.

  6. Fold bamboo leaves into a cone, put in 1 tbsp of rice, insert 1 tbsp of bean, pork and mushrooms, followed by another tbsp of beans and rice. Wrapped into triangle, use raffia strands to secure.

  7. Boil the dumplings for 2 1/2 hours and serve.
