Things you need for wrapping:
Appropriate amound of dumpling leaves (bamboo leaves).
Appropriate amount of raffia strands.
Ingredients:
1 kg glutinous rice
300g black-eyed beans, soaked
500g pork belly, diced
50g dried Chinese mushrooms, soaked
Seasoning for black-eyed beans:
2 tbsp oil
5 shallots, chopped
3 garlic, chopped
1/2 tsp pepper
1/4 tsp five spices powder (wu xiang powder)
1 tsp sugar
1/2 tsp salt
Seasoning for pork:
1/2 tsp pepper
1/4 tsp five spices powder
1 tsp sesame oil
1 tsp dark soy sauce
1 tsp sugar
1 tsp salt
Wrapping:
Soaked the dumpling leaves in hot water and washed.
Method:
- Wash glutinous rice, soaked for 4 hours and drain.
- Wash the black-eyed beans and soaked till soft. Drain away the water.
- Heat oil , stir fry shallots, garlic and the beans till fragrant. Add the beans seasoning.
- Season the pork belly with the pork seasoning, mix well and add the Chinese mushrooms.
- Add 1 tbsp of salt and 2 tbsp of oil and mix into glutinous rice.
- Fold bamboo leaves into a cone, put in 1 tbsp of rice, insert 1 tbsp of bean, pork and mushrooms, followed by another tbsp of beans and rice. Wrapped into triangle, use raffia strands to secure.
- Boil the dumplings for 2 1/2 hours and serve.
