Pineapple Cookies

Ingredients:

120g butter
130g cake margarine
1 egg
50g icing sugar
30g custard powder
270g plain flour
1/4 tsp baking powder
2 tbsp milk powder
1 egg for glazing

Pineapple filling:

1 pineapple (without juice)
50g coarse sugar
2 cloves
4 cm cinnamon stick


Method:

  1. Mix butter, margarine and icing sugar and beat till creamy. Add egg and mix evenly.
  2. Sieve custard powder, plain flour, milk pwder and baking powder.
  3. Add creamy paste and mix well, till dough form.
  4. Place pineapple, coarse sugar, cloves and cinnamon into a pot, cook under low fire till almost dry.
  5. Cut dough into smaller cookies sizw and wrape pineapple filling into the cookie dough.
  6. Mould the top of the cookie dough with a decorative plastic and glaze with egg.
  7. Preheat oven to 170ÂșC, bake for 18 mins.
