120g butter
130g cake margarine
1 egg
50g icing sugar
30g custard powder
270g plain flour
1/4 tsp baking powder
2 tbsp milk powder
1 egg for glazing
Pineapple filling:
1 pineapple (without juice)
50g coarse sugar
2 cloves
4 cm cinnamon stick
Method:
- Mix butter, margarine and icing sugar and beat till creamy. Add egg and mix evenly.
- Sieve custard powder, plain flour, milk pwder and baking powder.
- Add creamy paste and mix well, till dough form.
- Place pineapple, coarse sugar, cloves and cinnamon into a pot, cook under low fire till almost dry.
- Cut dough into smaller cookies sizw and wrape pineapple filling into the cookie dough.
- Mould the top of the cookie dough with a decorative plastic and glaze with egg.
- Preheat oven to 170ÂșC, bake for 18 mins.
