Banana Gingerbread - simply delicious, a great entry into Fall, and a wonderful way to use over-ripe bananas. The bread is a heavy and loaded with flavor! Great served warm with butter, or let cool and spread with cream cheese.
Pre-heat oven to 350 degrees.
Stir together the dry ingredients into a large mixing bowl:
1 cup Whole Wheat Flour
1 cup Flour
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 teaspoon Ginger
1 teaspoon Cinnamon
1/2 teaspoon Allspice
1/2 teaspoon Cloves
pinch of Nutmeg
Stir together the wet ingredients into another bowl:
1/2 cup Brown Sugar
1 cup mashed Banana (approx 2 bananas)
1/2 cup Molasses
1/2 cup Buttermilk
4 Tablespoons Cooking Oil
After the wet ingredients are mixed well, pour wet mixture into dry mixture. Stir until moistened. Batter will be lumpy. Pour batter into 9 x 5 loaf pan. Cook for approx. 50 minutes. Let cool for 15 minutes, slice and enjoy.
