Cream Puffs III

 
 Made this on AngahRuz's request and I was obliged because he's been studying hard lately to prepare for his SPM (his first paper will be tomorrow). Besides the two big boyz, Liana loves it too & she had three pieces in one serving and wanted more.... have not seen her eating that much of anything else before.... anyway gotta to stop her as not to spoil her appetite for dinner.
This version produces very nice crispy pastry and it did not shrink after came out from the oven. The inside also cooked well and most of all very delicious with the custard filling. This is the best cream puff recipe of all that I tried - perfect pastry & creamy custard filling.

(Makes 3 dozen)
INGREDIENTS:
250ml Water
78g Butter
93g Flour
4 Eggs

METHOD:
1. Place water & butter in a saucepan & boil.
Remove from heat & add flour, all at once.
Beat with wooden spoon until well mixed.
Return to heat & stir until smooth & non-sticky.
Cool slightly.
2. Beat in egg, one at a time until light.
3. Pipe or spoon onto greased baking tray.
4. Bake at 250C for 10 min, then 180C for 15 min until golden.
Cool on rack.
5. Inject custard filling.

CUSTARD:
2 Egg Yolks
50g Caster Sugar
30g Flour
200ml Fresh Milk
- Mix all & stir cook until thick & glossy.
- Alternatively microwave for 5 min, stir every 1 min.

Cream Puffs

 I promised some colleagues in the office that I'll make them cream puffs for our breakfast today. Although I'm loyal to one recipe I decided to try out another recipe for comparison. I've posted my favourite version earlier here (but was with durian filling which you can substitute with your preferred filling).

INGREDIENTS:
250ml Water
100g Butter
1 tsp Sugar
125g Plain Flour
3 Eggs
1/2 tsp Salt (HomeKreation: I reduced to 1/4 tsp but I think next time to reduce it further)

CUSTARD FILLING: 
(HomeKreation: I've halfed the recipe as follows) 
250ml Fresh Milk
1/2 Egg
12g Custard Flur
15g Cornflour
50g Sugar
1tsp EV
HomeKreation method: mix all in a bowl & microwave for 4 min. Stir every 1 minute. Cool.


METHOD:
1. Place water, butter & sugar in a pan & boil until all melted.
Off fire & add in flour & salt.
Stir until well mixed & become non-sticky. Cool.

2. Add in egg one by one & stir until smooth.
Pipe onto a greased baking tray.
Bake at 190C for 20 min.

3. Fill puffs with custard filling.
Dust with icing sugar or drizzle some melted chocolate.

 Hello again.... it has been several days since the last update. I've been very busy with so many activities at works & home that it pulled me down a bit. I'm having fever, flu & cough at the moment and the doctor has issued me a sick leave for tomorrow but am hoping that I will get better by tomorrow to be able to go to work. I've been doing nothing much today except lying down but after having a cup of hot coffee & Cokodok just now, I sweat a bit & feel slightly better. So, while my head is feeling lighter now, I thought of updating one post for you all here.

Despite feeling giddy & heavy head in the morning I managed to make some Dorayaki for the family for breakfast but ended up too browned and uneven colour.... I have an excuse for not doing a good job this time...hehe! Although the look is not up to my expectation but the taste is good... very soft! I made very cute size (7cm diameter) - smaller than a sauce plate below, using Serabai mould.

Since I wasn't too well, most of the photos are shot by my 2nd son, AngahRusydi.... quite a good job eh...!

(Makes 11 pancakes / 5.5 Dorayaki )
INGREDIENTS:
2 Eggs
30g Caster Sugar
30g Honey
1.5g Baking Soda
120g Cake Flour
20g Corn Oil
10g Milk
Filling: Red bean paste

METHOD:
1. Whisk eggs until frothy & gradually add in sugar.
Beat until light & white.
Add in honey, BS, flour, milk, corn oil while beating.

2. Rest 30 min in fridge.
Cook like making pancakes above small fire.
Sandwich with your favourite filling.

Kaya Balls


Awesome... awesome...awesome.....! That's all I wanna say..... If you want some, you gotta try yourself. The recipe taken from Diana (FRD) contributed by Mamafami & MakNgah. Thanks to all for sharing.

Recipe copied from FRD for those who wants the BM version:
Bahan-bahan
250g tepung gandum
1 sudu teh serbuk penaik
secubit garam
125g mentega (Mama guna majerin aje!)
75g gula kastor
4 biji telur
200ml susu segar
1/2 sudu teh esen vanila
Serikaya

Kaedah penyediaan :
1. Ayak tepung, serbuk penaik dan garam. Ketepikan.
2. Pukul mentega dan gula hingga kembang. Masukkan telur dan pukul lagi.
3. Masukkan esen vanilla.
4. Masukkan 1/4 susu, putar, masukkan 1/4 campuran tepung, selang-seli hingga habis.
5. Lenser acuan dengan sedikit minyak masak. Sudukan bancuhan agak-agak separuh acuan, sudukan pula sedikit kaya dan tutupkan dengan lebihan bancuhan.
6. Panaskan ketuhar pada 145 C dan bakar pada rak tengah selama 10 - 12 minit.
Along guna acuan takoyaki, bakar atas dapur je.

Translation:
INGREDIENTS:
250g Flour*
1 tsp Baking Powder*
1 pinch Sal* (*Sifted together)
125g Butter/Margarine (I used margarine) 
75g Caster Sugar
4 Eggs
200ml Fresh Milk
1/2 tsp EV
Serikaya (Egg jam)

METHOD:
1. Beat butter & sugar until fluffy.
Add in egg while continue beating.
Add in milk & flour alternately.

2. Fill 1/2 muffin cup, sekaya and cover with some batter.

3. Bake 145C for 10-12 min in the middle rack.
(I did not bake mine in oven but just use takoyaki mould on top of a stove).

Quick Waffles


It has been a while since I last made waffles for the boys. My youngest boy, Radhi, is very good in making waffles himself but somehow we had not been into waffles mood until this morning.

(Makes 3 sets x 5 pieces)
INGREDIENTS:
2 Eggs
3/4 cup Fresh Milk
2 tbsp Veg Oil
1 cup Flour
1
½ tsp Baking Powder
1½ tsp Sugar
½ tsp Salt

METHOD:
1. Heat up waffle maker.

2. Beat eggs until frothy.
Add in milk & the rest while beating.
Mix well.

3. Pour into waffle maker & cook until golden.
Follow the instruction of the waffle maker for cooking time.

4. Serve hot with your favourite syrup (maple/honey/fruit sauce), icecream or jam.

Crepes


Crepes or thin pancakes are called Lempeng in Malay. Since I have leftover fish curry from last night dinner, I thought crepes will be nice and healthier than Roti Canai. It is also a lot simpler & quicker to make anyway. It is soft in texture and you will love it!

Here it goes....

INGREDIENTS:
1 cup Plain Flour
2 Eggs
1/2 cup milk
1/2 cup water
1/4 tsp salt

METHOD:
1. Place all ingredients in a blender & process until smooth.

2. Heat up a griddle & wipe surface with oil.
Pour a scoop of batter & spread thinly.
Cook until the edge curled up a bit & flip.
Cook the other side for 1 minute.
Repeat until all batter used up.

3. Serve with savoury or sweet filling of your choice.
I dipped my crepes with curry ....emmmh delicious!

Banana Pancake

This Banana Pancake is light & fluffy. It is not very sweet, so it goes well with any preferred syrup & icecream. Recipe taken from AllRecipes.

INGREDIENTS:
1 cup Flour*
1 tbsp Sugar*
2 tsp Baking Powder*
1/4 tsp Salt* (* mix together)
1 Egg
1 cup Milk
2 tbsp Veg Oil
2 Riped Banana - mashed

METHOD:
1. Beat egg slightly.
Mix in milk, oil & banana.
Add in mixed dry ingredients & stir well.

2. Heat up pan & spread 2-3 tbsp.
Cook until bubbles appear on the surface & burst (see photo below).
Flip & cook the other side for 1/2 minute.
3. Serve with favourite syrup like maple, strawberry, blueberry, chocolate, etcs.

Durian Puffs

I still have some Durian pulps in my freezer and somehow Durian Puffs crossed my mind.... So I invented the filling to suit my desire.... The puff pastry is a recipe that I've been keeping since student time about 20 years ago... The combination of the two is perfect and DELICIOUS! My hubby loves it & so do the boys...!

(Makes 26)
INGREDIENTS:
50g Butter
125ml Water
65g Flour
pinch of Salt
2 Eggs - slightly beaten
DURIAN FILLING:
6 big pieces Durian Pulp - remove seeds
1 tbsp Cornflour
¼ cup Coconut Cream
- Boil Coconut cream, cornflour & green color.
- Add in durian pulps & stir until smooth & thick.

METHOD:
1. Place butter & water in a pan & stir over heat until boiled.
Off fire, add in Flour & Salt.
Stir until smooth & cool.
Beat in egg gradually until smooth.

2. Pipe onto greased tray & bake 10 minutes at 250C, then 15 min at 180C.
Make a slit & put filling.

Chocolate Cream Puffs

This delicious Chocolate Cream Puff will surely allure you for more & more....! Easy and quick to make will be a good idea for last minute unplanned entertaining.

INGREDIENTS (produce 3 dozens):
1 cup Flour
2 tbsp Cocoa powder
1 cup Water
½ tsp Salt
1 tbsp Sugar
½ cup Unsalted Butter
4 Eggs

METHOD:
1. Sift flour & cocoa together & put aside.
{Ayak tepung & serbuk koko}

2. Boil the rest of ingredients, except eggs, until the butter is melted and remove from heat. Pour in flour mixture, all at once. Mix well.
Beat in egg one at a time untill well blended.
{Panaskan bhn2 yg lain kecuali telur sehingga butter cair. Tutup api. Masukkan campuran tepung sekali gus & kacau sehingga sebati. Masukkan telur satu-persatu sambil di pukul}

3. Pipe or spoon onto greased baking tray.
Bake for 25 minutes at 210C. Cool.
{Paipkan atau sudukan ke atas dulang pembakar yg di minyakkan. Bakar 25 minit suhu 210C. Sejukkan}

4. To make the chocolate custard, place 4 egg yolks, 100g sugar, 60 g flour, 600ml milk & 80-100g chocolate in a saucepan. Stir until thicken & boiled.
{Untuk membuat kastad coklat, letakkan kesemua bhn ke dlm periuk & kacau sehingga pekat & menggelegak}

5. Cut a slit & spoon chocolate custard into the puffs or inject the custard using injection nozzle.
{Isikan kastad coklat kedlm puff dgn cara memotong sedikit ataupun inject}

6. Drizzle melted chocolate on top. I used Swiss chocolate fondue bought at KLIA.
{Kalau rajin, boleh buat topping coklat cair atau pun guna coklat fondue}

Dorayaki



The pancake should produce bubbles while being cook: This recipe is from MyResipi by skyblue. My second son, Rusydi loves this and been asking me to make this again after the last trial. I ran out of castor sugar & used brown sugar instead & hence the brownish color.... The original recipe is translated into English as follows:

INGREDIENTS:
100g Cake/Plain Flour
½ tsp Baking Soda
60g Castor Sugar
2 tbs Honey
2 Eggs
½ tbs Vegetable Oil
½ tsp Vanilla Essence
Red Bean filling sufficiently

METHOD:

1. Beat egg & sugar until fluffy.
Add in honey, vanilla essence & mix well.
Add in flour, baking soda and stir gently.
Add in 1-2 tbs milk if it is too thick.

2. Heat a non-stick pan & spread like cooking pancake. See picture above, I used a tiny pan of 5 inch diameter. When bubbles appear & break, turn to cook on the other side.
Tips: Do not cook too long or else the pancake will be tough.

3. When all are cooked, sandwich two pieces of pancakes with red bean paste to form Dorayaki.

Chocolate Waffles


Today's breakfast menu was decided by my kids. One wanted Chocolate Waffle, the other wanted Nasi Goreng & the third asking for Kebab...! Gheee...Somehow I'm in a mood to entertain all of them... I share the chocolate Waffles herewith and I'll share the kebab recipe when it is ready later...

This Chocolate Waffles is very rich in taste & texture like brownies....my kids just love it! Original recipe is by Hershey but I have simplified it a bit. Serve with your favourite syrup & icecream or simply delicious by itself.

INGREDIENTS:
½ cup Cocoa powder
62g Butter/Margarine
¾ cup Sugar
2 Eggs
2 tsp Vanilla essence
1 cup Flour + ½ tsp Baking soda + ½ tsp Salt
½ cup Fresh Milk + 1½ tsp Vinegar

METHOD:
1. Preheat waffle maker (WM).
2. Mix Cocoa, Butter & Sugar.
Add in Egg one by one while beating.
Add Flour mixture alternating with Milk.
3. Pour into WM & cook per manufacturer instruction.
4. Serve with favourite sauce like maple syrup, fruit syrup, chocolate sauce, custard, icecream...etc, etc per your imagination.
