Store bought Alfredo sauce tends to be a bit pricey and my family doesn’t really like the taste of it so I came up with my own homemade recipe. This is my 18-year-old's favorite meal.
Fettuccine Alfredo
8 oz. cream cheese, cut in 1-inch cubes (do not substitute low fat or the sauce will be too thin)
1 cup Parmesan cheese (I use the store brand in a shaker can)
1/2 cup butter or margarine (I prefer butter but in a pinch I have used margarine)
2 cups milk
1 lb. fettuccine noodles
Dash of nutmeg (optional, but it adds a nice flavor)
Pepper to taste
Cook pasta by package directions. In a large sauce pan combine butter, cream cheese and milk. Cook on med., stirring constantly until smooth. Be sure to watch carefully to avoid scorching turn down heat if necessary. Add Parmesan cheese stir constantly and allow to simmer until desired thickness. You can add more Parmesan cheese if you like a richer flavor. Add nutmeg and pepper.
Serve over pasta.
Serve with a salad and loaf of Italian bread and this is a nice hearty and frugal meal. This is even a nice meal for when you have company. This meal including the salad and bread costs around $5 and it feeds my family of 6.

Pasta recipe
Pasta in Marathi
Serves: 2 persons
Time: 30 minutes

Ingredients:
1 cup Whole grain Penne pasta
1/4 cup Red bell pepper, small cubes
1/4 cup Green bell pepper, small cubes
1/4 tsp red chili powder
3 tbsp olive oil
2 pinches Oregano
Red chili flakes to taste (Optional)
Salt to cook pasta
3 tbsp Pasta sauce
Method:
1) Heat 5 to 6 cups of water into a deep saucepan. Add 1 tbsp salt. Once water starts boiling add 1 cup pasta and cook for 15 minutes or according to packet instructions. Do not cover saucepan while cooking pasta. Add water if needed.
2) Once pasta is cooked, drain the water wash pasta under running water. Drain all the water.
3) Heat a pan, add 1 tsp olive oil, put in cut bell peppers, saute for 1/2 to 1 minute. Sprinkle pinch of Oregano, salt and red chili powder. Add 3 tbsp pasta sauce. Turn the heat to low, add cooked pasta and mix nicely. Add some pasta sauce if required. Serve into bowls.
Garnish it by sprinkling pinch of oregano and shaved Parmesan cheese.
Note:
1) Sprinkle little chili flakes for extra heat.
2) Don't cook Bell pepper for longer. It will become soggy and won't taste good in pasta.

Time: 35 minutes.
Ingredients:
6 Tomatoes
2 tbsp readymade tomato paste
3 tbsp Olive Oil
4 big garlic cloves, thinly sliced
1/4 cup Onion, chopped
1/2 tsp Red chili powder
1 tsp dry Oregano, powdered
2 pinch Black pepper
Salt to taste
How to make Pasta?
Method:
1) Halve each tomato. Take a baking tray, grease with 1 tbsp olive oil. Place tomato halves, cut side down. Sprinkle sliced garlic all over tomatoes.
2) In other small baking bowl mix very little olive oil and sliced onion. Preheat oven 400 F bake tomatoes and onion for 15 minutes. Keep both bakewares on the middle rack. Keep eye on it.
3) After 15 to 17 minutes tomato will become little mushy and onion-garlic will change little color. Let them cool down. Then puree only in the grinder.
4) Heat a pan, add olive oil, add red chili powder and Onion. Saute for a minute, add tomato mixture and stir. Then add tomato paste and stir nicely. Simmer for 10 to 15 minutes.
5) When sauce become thick, add oregano and salt. Cook for 2 more minutes and remove from heat.
Note:
1) Tomato paste gives nice color to Pasta sauce. If you don't have tomato paste, use little tomato ketchup (It shouldn't be too sweet). However, tomato ketchup may give little sweet taste to the sauce.
2) If you can't find oregano, use basil or thyme. Pasta will get that particular flavor.

I just found your site yesterday, and what a resource it will be in the future! Being an 8–5 working mother, I often don't have time to make tough or complicated recipes (especially if we want to eat before 8 pm), and many times I am scrambling for ideas as well as ingredients. Anything quick, fast, cheap and with minimal prep time is enough to catch my eye!
I thought I would pass along this recipe, as it can be put into the slow-cooker slot as well as under Italian. Though I never "measure" any of my ingredients when cooking, I did my best to accommodate. Thanks so much for the site!
Slow Cooker Spaghetti Sauce
No one will ever know that you made from "jarred" sauces. Almost everyone I know thinks I slaved all day making it from scratch using fresh tomatoes! This recipe is also the staple to most of my Italian meals, Lasagna, Baked Ziti or any other meal calling for a tomato based sauce.
1 (28 ounce) jar spag. sauce
1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 (10 ounce) can condensed tomato soup
1/2 pound sausage, chopped into fine pieces (sometimes I use the links, and slice giving it more "gusto" in it's appearance, as well as making it look "more homemade")
1/2 pound ground turkey
2 onions, chopped
1 small green bell pepper, minced
3 cloves garlic, pressed
basil
oregano
Italian seasoning
Salt and pepper to taste
2 packet's of Sweet-n-Low OR 4 teaspoons of sugar or sweeten to your individual taste
(If you need more sauce, or need more liquid, add another jar of store bought spag. sauce, or can of tomato sauce … NEVER add water!!!)
1. In a slow cooker, combine diced tomatoes, tomato paste, and tomato sauce. Set slow cooker to High.
2. Place ground turkey and ground turkey sausage in a large, deep skillet. No need to add oil, just start it over low heat, and you should not have to drain! (If you use beef, you will need to drain.) Cook over medium-high heat until evenly brown. Crumble browned meat finely, add onions, green pepper, and garlic until onions are translucent. Transfer to the slow cooker.
3. Season with spices.
4. Cover, and cook on low for no less than 7 hours. Should you need it quicker, cook on High for minimum of 3 hours. Remember, the longer it cooks, the better it will taste!

Your spaghetti sauce sounds fantastic, Leona! I make my own as well but just cook it slow on the stove top the old fashioned way. You can also substitute a large can or two of tomato sauce and up your spices in place of the jar sauce. Then your "homemade" sauce will be even more homemade, and a little cheaper! :o) - Michelle

Here's a frugal & delicious easy recipe for the crock pot!
Crock Pot Italian Sausage
Mix the following ingredients in your crock pot:
3 links Italian Sausage, cut up
2 cans Italian Tomatoes
4 red potatoes
1 can of corn
Salt & pepper to taste
Dried Basil
Cook for 8 hours on low
Boil:
1 bag of Rotini pasta, mix & serve!

Chicken with Pasta and Chicken Cacciatore

I have two simple recipes that don't cost much and are easy and delicious to have as leftovers. I didn't make them up, just modified, and you can too! First is just a box of Alfredo pasta or you can get egg noodles and a jar of Alfredo, unless your one of the do it yourselfers than you can make your own Alfredo. I'm not that talented, lol. Start the pasta as directed, in a separate pan heat some oil and cook 2 or 3 boneless skinless chicken breasts, cut them up before hand or just slice them as they cook with spatula. In another little pot heat up some canned green beans. Add the chicken to the pasta and you have chicken Alfredo and veggies on the side. I don't think this dinner has ever cost me more than $3 - $4 because I buy the bagged frozen ready to cook chicken and my kids always want seconds.
The second recipe is awesome, it's called Chicken Cacciatore and is very easy, lots of leftovers, and great as a burrito. Start by cooking some white rice, in a large enough pot to add all other ingredients at the end, how ever much you need for your servings. While that's going, start some chicken, again however many people you are cooking for, I have a household of 4 and I use 3 chicken breasts. In another pan, a lot of pans I know, melt some butter, start cooking 1 sliced up green bell pepper. Once that has had about 5 minutes, add some chopped onions, give it a few minutes, make sure to be stirring! Then I throw in a can of sliced olives, about 1/2 cup of fresh sliced mushrooms, and a can of diced green chilies. Stir and cook until the mushrooms are nicely sauteed. Everything else should be finished by now and not burnt since you weren't ignoring them right? Throw it all together in the big pot you cooked the rice in and add 1 or 2 jars of marinara sauce, depending on how many you are cooking for, like I said 1 jar does fine with a family of 4. Cook until heated, serve in a bowl or as a burrito!
This is a delicious very nutritious meal that is under $10 and loved by all! Modify to your tastes.
