Vegetarian Brown Rice Dumpling


Dumpling Rice Ingredients:




1kg glutinous rice


50g shallots, removed skin and diced


200g peanut oil


20g fine salt


20g seasoning powder


20g coarse sugar




Filling Ingredients:




600g Bailing mushroom, diced


250g dried mushroom


600g mushroom, diced


10 chestnut


15g five spices powder (wu xian powder)


15g fine salt


15g seasoning powder


25g coarse sugar




Wrapping




10 pcs lotus leaves, soaked, washed and dried


20 salted raffia strands, soaked, washed and dried


40pcs bamboo leaves, soaked, washed and dried






Method;




  1. Wahs the unpolished rice, use appropriate amount of water to steam. Soak the dried mushroom, wash steam for 2 hours, dice and set aside.


  2. Remove the skin of chestnut, steam for 2 hours and set aside. Heat up peanut oil, stir-fry the shallots till fragrant, add in rice and dumpling rice seasoning to season, stir-fry till fragrant, set aside.


  3. Mix well all the illing ingredients and set aside. Place 3 pieces of bamboo leaves on top of the lotus leaf.


  4. Place the rice in the middle of the bamboo leaves and add on the fillings. Add another layer of rice, then another piece of bamboo leaf, tie into rectangle with 2 salted raffia strands.

  5. Boil for 2 1/2 hours.
