I chose Cheese Butter Cake for Liana's birthday since she cannot make her choice yet and furthermore I wanted something that can go well with buttercream.
I found this cake from SajiOnline but it has several negative and sceptical comments from readers. Despite not so good opinions about the cake/recipe, I like the idea of using condensed milk in place of sugar and I thought I could improve the recipe instead. Indeed there are few problems with the recipe that I could tell from the surface... the portion is far too big for a standard tin size, too much condensed milk resulted in a very sweet cake and too little flour. Also the method is incorrect as it adds flour first then eggs into the butter mixture. Another problem in it is the cooking method using steambath baking is not suitable for heavy type of cake like this. With so many errors like this, I can see why it is a disaster for people who tried it. Despite the complaint I see the writer made no attempt to respond and that concludes itself that the problem is true.
So here is my version, rewriting the whole recipe (the only idea I copied from the recipe is using condensed milk in place of sugar). The result is unbelievable rich & moist cake. My sons had 3 big pieces each, my hubby had 2, me & Patma had 1 each & the whole cake was almost gone in one serve. I manage to reserve two slices for my good friends in the office. You must try this great recipe....
(Makes 9" round)
INGREDIENTS:
250g Cream Cheese
250g Butter
250g Condensed Milk (I used sweetened creamer)
4 Eggs
225g Flour*
1 tsp Baking Powder* (* mixed)
1 tsp Vanilla Essence
METHOD:
1. Beat cream cheese until creamy & smooth.
Add in butter & condensed milk & continue beating until white & fluffy.
Add in egg one by one until well mixed.
Add in VE.
Add in flour gradually until well mixed.
2. Bake at 170C for 45minutes.
Cool on wire rack before decorating.
