One of our families quick and easy meals is:
Southwestern Potatoes
1 box Au Gratin Potatoes
1 can Southwestern Corn with Black Beans (may substitute regular kernel corn, drained, or Fiesta/Mexican corn)
1 lb Ground Beef or Turkey
Taco Seasoning, 1 package or to taste
1 cup shredded cheese (optional)
Preheat oven to 350 degrees, or as noted on the box of potatoes for oven preparation. Brown the ground beef or turkey. Drain and return to pan. Add taco seasoning and cook according to instructions on package. Put all contents from the box of potatoes into a 9x13 pan, along with the required amount of water, milk and/or butter as noted on the instructions. Add the corn and seasoned ground beef. Mix all together and put in the preheated oven until the potatoes are tender. Top with shredded cheese & return to oven for 5 more minutes or until cheese is melted.

Filipino Spaghetti

Filipino Spaghetti
I have a recipe that I'd love to share. It's Filipino Spaghetti. My toddler absolutely loves this version of spaghetti (probably because it's sweet) and won't even eat the more traditional Italian version anymore. It's so easy to make and I usually have majority of the ingredients on hand.
1 box spaghetti noodles
4 cloves of minced garlic
1 large yellow onion
1 - 1.5 lbs. ground beef or turkey
6 hot dogs
1 tall can spaghetti sauce (preferably hunts traditional)
1 small can diced tomatoes
1 small can tomato paste
1/2 bottle of banana ketchup (easy to find in any Asian store)
1 cup of tomato ketchup
2 tablespoons sugar (add less or more depending how sweet you want it - it's already going to be fairly sweet b/c of the banana ketchup)
I usually boil the water for my noodles and begin to prepare the sauce at the same time. Prepare the noodles as usual and add some salt to the noodles while in the boiling water, drain when cooked, and set aside. Saute the garlic and onions in olive oil. Add ground meat and cook until brown. Slice the hot dogs diagonally and add to the meat and saute for about 5 mins. Add spaghetti sauce, diced tomatoes, tomato paste, banana ketchup, tomato ketchup, and sugar and heat on medium-low heat until the sauce mixture is heated through. Combine the sauce and noodles together. Enjoy!

Hi, here is my son's favorite soup of all times. It's very inexpensive and super healthy!
Lentil Beef or Turkey Soup
(Serves 8)
1 T. vegetable oil
1 lb ground beef or ground turkey (about $4.00)
1 lb. bag lentils (about $1.00)
4 c. water ($0)
3 beef bouillon cubes ($.75)
1 28oz can pureed or crushed tomatoes (about $1.00)
1 c. chopped onion ($.50)
1 1/2 - 2 c. chopped carrot ($.50)
Salt/pepper/red pepper flakes to taste
Total: $7.75 (I did not count the oil and spices)
Directions:
Brown ground beef/turkey and drain. Put everything else in pot, bring to a boil, cover and simmer for 1 - 1 1/2 hours. Add water if it is too thick. Enjoy
It tastes even better the next day.

Baked Chili Dish with Ground Turkey and Macaroni
This is my 2 year old's favorite recipe - it's hearty, healthy, and economical - perfect!
Ingredients:

1/2 of a chopped green bell pepper
1/2 of a chopped red bell pepper
1 pound ground turkey
1/2 box of whole wheat elbow macaroni
28oz can whole tomatoes
Small can tomato paste (or a good squeeze from a tube)
Huge can of northern beans
3/4 T. chili powder
1/2 tsp. cumin
Sea salt and pepper
Dash oregano
Crushed red pepper or hot sauce, if desired
1 cup cheddar cheese
Directions:
Boil macaroni for about 5 minutes in salted water. Drain and set aside. Heat olive oil in dutch oven on stove top. Add garlic, onion and bell peppers. Cook and stir about 5 minutes. Add ground turkey and cook until no longer pink. Crush tomatoes with a potato masher and add to turkey mix. Add whole can of beans, undrained. Stir in chili powder, cumin, salt and pepper and oregano.
Taste to check for seasoning. Increase chili/cumin/hot pepper if you want it spicier. Add the macaroni and the cheese and stir. Bake in 325 degree oven for about 25 minutes.

Turkey Breast, Turkey Noodle/Rice Soup and Turkey Waldorf Salad
This is actually a terrific way to use 1 whole turkey breast in 3 different ways. Purchase a 5-6 lb. uncooked frozen turkey breast (should be in the freezer section of your grocery store, near the whole turkeys). Place frozen turkey breast in an oval crock pot on low for 8-10 hrs. Do not add water. (If it won't fit under the lid, cover tightly with foil and cover with lid). You may also thaw the turkey ahead of time in the fridge, but it isn't necessary). When it falls off the bone, it is done. Strain the leftover broth for #2meal below.
1. TURKEY BREAST - MAIN MEAT DISH
You may then serve this for a meal along with potatoes, dressing, etc. After the meal, carefully debone the turkey and cube the rest of the meat. Yield will depend on how much was served for above meal.
2. TURKEY NOODLE OR RICE SOUP
9 c. of turkey or chicken broth (use broth from cooking turkey and add to it)
4 med. carrots, shredded
3 celery ribs, diced
1 med. onion chopped
2-3 c. cooked turkey, cubed
1 c. uncooked macaroni OR instant rice (if using regular rice, you will need to cook it longer before serving)
1 t. sage, optional
1 t. parsley
In large kettle, bring first 4 ingredients to a boil. Reduce heat;cover and simmer for 1 hr. Add turkey, macaroni or rice and parsley; cover and simmer for 10-15 min. til done.
3. TURKEY WALDORF SALAD
2-3 c. cooked turkey, cubed
1 red delicious apple, diced and dunked in salt water to keep from browning
1 c. red grapes, halved
1 c. mayo
1/4 c. walnuts, broken, optional
Combine all and chill. Serve over a bed of lettuce, in a croissant or as a sandwich.
