Quick Fish Rendang


Come & try this recipe of mine.... simply good and most of all sweatless... ready in just short time!

INGREDIENTS:
4 Large fish slices
6-8 Shallots*
1" Ginger*
1 Lemongrass*
Few Chili Padi* (* pounded) 
10 tbsp Chili Paste
1 Lemongrass - bruised 
1 Turmeric leaf - sliced thinly 
1/2 tsp Turmeric powder - for cooking 
1 piece Dried Tamarind
1 packet Coconut Cream
Salt

METHOD:
1. Rub fish with some turmeric powder & salt.
Deep fry until golden & cooked.
Dish out.

2. Heat up some oil & fry pounded ingredients* & chili paste until fragrant.
Add in few tbsp coconut cream & the rest of ingredients (except fried fish) & stir until dry (this takes only 1-2 minutes).
Repeat adding few tbsp coconut cream until it is is used up & thick paste is obtained.
Lastly, add in fried fish & stir until well mixed.

3. Serve with favourite rice or just plain white rice.
