Emulsified Swiss Roll

Ingredients:

300g whole egg beaten
4 egg yolks
140g castor sugar
100g med. protein flour
50g corn flour
14g emulsifier gel
75gMelted butter/ margarine

Method

  1. Blend all ingredients together on low speed using a whisk.
  2. Scrape down and mix on high speed for approx 5 mins.
  3. Ad in fat ag the last stage.

Make up procedure

  1. Grease a swiss roll tray and cover the bottom with paper.
  2. Spread the sponge mixture evenly over the tray.
  3. Bake in hot oven 205-210 till baked, approx 8-10 mins.
  4. Remove from the oven, allow to cool slightly the turn out onto sugared paper.
  5. Spread with filling and roll up.
