Ingredients:
1 large old cucumber
1l hot water
6 cups chicken stock
400g boneless chicken breast, cut into small pieces
20g snow fungus, soaked, cut into small pieces
1 small carrot, cubed
3 dried mushrooms, soaked, quartered
1 can straw mushrooms, halved
8 cooked quail eggs
1 stalk coriander (garnish)
Method:
- Cut cucumber in half, length-wise, with skin. Remove seeds and cut into smaller sections.
- In a pot, add water, stock, chicken, fungus, carrots and mushrooms. Bring to boil.
- Reduce heat and simmer for 20 mins. Add quail eggs and boil over medium heat for 15 mins. Garnish with coriander leaves and serve.
