Golden Melon Soup

Serves 4

Ingredients:

1 large old cucumber
1l hot water
6 cups chicken stock
400g boneless chicken breast, cut into small pieces
20g snow fungus, soaked, cut into small pieces
1 small carrot, cubed
3 dried mushrooms, soaked, quartered
1 can straw mushrooms, halved
8 cooked quail eggs
1 stalk coriander (garnish)

Method:

  1. Cut cucumber in half, length-wise, with skin. Remove seeds and cut into smaller sections.
  2. In a pot, add water, stock, chicken, fungus, carrots and mushrooms. Bring to boil.
  3. Reduce heat and simmer for 20 mins. Add quail eggs and boil over medium heat for 15 mins. Garnish with coriander leaves and serve.
