Seafood Soup

Serves 4

Ingredients:

1 tbsp garlic oil
1 garlic clove, lightly crushed
100ml hot water
6 cups fish stock
2 tomatoes, cut into chunks
5 baby corn, cut into bite-size pieces
2 tofu, cut into small cubes
50g button mushrooms
200g fish slices
100g squid, cut into bite-size pieces and blanched
6 medium-size prawn, blanched
Ground white pepper, to taste

Garnish:

lettuce and coriander leaves

Method:

  1. Heat wok with garlic oil. Add garlic and fry until fragrant. Add hot water and fish stock, bring to boil.
  2. Add tomatoes, corn,tofu and mushrooms. Boil for 2 mins.
  3. Add fish slices, squid and prawns. Simmer for 5 mins. Season to taste with pepper. Garnish with lettuce and coriander leaves. Serve hot.
