Ingredients:
500g green prawns
60g butter
2 tbsps plain flour
8 cups fish stock
1/2 tsp paprika
1 cup cream
1/3 cup dry sherry
pinch of salt
Methods
- Shell the prawns and reserve head and shells. Heat butter in pan and add heads and shells, cook for 5 minutes then crush heads .
- Add flour and stir till combined. Add stock, paprika and salt. Stir over heat till mixture boils. Simmer and cover it, cook over low heat for 10 minutes. Strain mixture and add prawns. Cook for 2-3 minutes, let cool slightly, the place batches in blender or food processor to process till smooth.
- Return mixture to pan and add cream and sherry, stir well. Heat through before serving.
