One of my families favorite recipes, I can make it for less than $1 per serving.
Shipwreck
3-4 potatoes, peeled and sliced thin
1 lb ground beef
1 cup uncooked rice (NOT instant rice)
2 medium onions, sliced thin
2-3 ribs celery, sliced
2-3 large carrots, peeled and sliced
Layer, in order in a large casserole dish or 9 x 13 pan, seasoning to taste with salt and pepper and any other seasonings you like. Mix 2 cans of tomato soup with 2 soup cans of water and pour over the ingredients. Cover with foil and bake in oven for 2 - 2 1/2 hrs at 350 degrees.
This is also good using a cream soup instead of the tomato. On days that I don't want to do as much cutting I will use 2 - 3 cups of frozen mixed veggies instead of the celery and carrots and it works great.
A great recipe to play with and work with what you have on hand.
