Gingerbread Butterscotch Cookies
A very flavorful cookie, slightly crisp on the outside and chewy in the inside.
Pre-heat oven to 350 degrees.
3 cups All Purpose Flour
2 tsp Baking Soda
1 1/2 tsp Cinnamon
1 1/2 tsp ground Ginger
3/4 tsp Cloves
1/2 tsp Salt
Mix dry ingredients above into a bowl and set aside.
1 cup Butter
1 1/2 cups dark brown Sugar
1 Egg
1/3 cup Molasses
Cream butter until soft. Add sugar and mix until light and fluffy. Add egg and molasses. Add dry ingredients and mix until well blended.
Add 11 oz of Butterscotch chips to the cookie dough mix.
Spoon by Tablespoon (or cookie scoop) onto cookie sheet or baking stone. Cook for 9 - 11 minutes at 350 degrees. Let cool a few minutes before transferring to cooling rack. Cookies will continue to flatten as they cool.
Enjoy with a cold glass of milk!
