Ham and Potato Casserole
1 pkg of diced ham ($2.25 at Wal Mart in Louisiana)
1 pkg shredded cheese (2/$3.00 again at Wal Mart) Use your favorite type of cheese
1 can cream of mushroom or celery soup, even cream of chicken works well
1 pkg of frozen hash browns
Mix all ingredients in casserole dish and pop in the oven at 350 degrees for 20-30 minutes depending on your oven.
Don't know how many adults it would feed, but I feed twelve children under four years old, including "seconds." The kids love this dish. And, my own family loves it. I generally feed 4-5 people and add a salad. My husband, myself, and three to four college aged grandsons depending on who is home that night! I usually make a fruit desert or jello to add to menu.

Breakfast Biscuits
This is a simple recipe that my kids LOVE!!!!!
2 packages of Jiffy buttermilk biscuit mix
8 eggs scrambled
15 slices of cooked bacon
1 cup shredded cheddar cheese
Make mix according to box. Add bacon, scrambled eggs, and cheese. Bake according to box, serve warm.

Super Easy ' N Cheesy Mac & Cheese

I just discovered Better Budgeting today, and I think the whole site is FANTASTIC!
I had to share my favorite mac-n-cheese recipe with you. Super easy and super good. This uses Velveeta, which I know is expensive, but in our local grocery store (Kroger's) they have a store brand Velveeta they call Nice 'N Cheesy, which works fine. For a 2-pound box, Velveeta is about $6, while Nice 'N Cheesy is about $4.
Super Easy 'n Cheesy Mac & Cheese
1 pound box of elbow macaroni, cooked & still hot (or amount to fill whatever baking dish you're using)
2 pound box Velveeta-type cheese (you won't use the whole box, but probably more than half)
Milk
Margarine
For a 2 qt. casserole dish, pour half the macaroni in the dish, slice the Velveeta and COVER every bit of macaroni. If you can see it, cover it up. Dot with margarine. Repeat for a second layer. Pour milk over it all till it is about half way up in the dish. Bake at 350* for 30 min until everything is all melted together.
I have a 10-inch deep-dish pie plate I like to use, and I only use one layer in that, but adjust it to what you're cooking it in. This is FABULOUS, and I have never had anyone not like it!

Creamy and Spicy Mac 'N Cheese
This weekend we had a blast of snow come through Atlanta and it was so fun, and COLD! A great time for a quick and easy comfort dinner, such as the good ol' pantry standby; Kraft macaroni and cheese. For our family of 6 I made two boxes. When I prepared the cheese sauce I added about 1/2 c. pepper jack cheese, stirring until completely melted, then added the drained macaroni. It was creamy, spicy and absolutely delicious!
I think this would have been great with some cut up red and green pepper as well, if I'd had any on hand, and if my kids would eat it! ;o)

Hi there, I wanted to add a recipe that uses specific bakeware for optimal results. Of course, the FoldTuk isn't necessary for the recipe, but since I have found that it cooks faster and more evenly, I thought this particular recipe would be a neat contribution to your site.
Macaroni and Cheese
Ingredients:
1 medium sized box of Mueller Elbow Noodles
3 bags of cheese: 1 bag (4 oz.) Kraft shredded sharp cheddar, 1 bag (4 oz.) Kraft shredded mozzarella, 1 bag (4 oz.) Kraft shredded Colby-Jack cheese
3 large eggs, beaten
1 and 1/2 cups milk, approximately
Preparation:
Boil noodles, drain excess water, layer into 6-cup (1.42L) FoldTuk, or casserole dish (with cheese, noodles, cheese, noodles, cheese… etc.) Add milk, pouring evenly over entire dish. Pour eggs over the top of the dish. Bake at 350 degrees for about 30 minutes or until browned on top.
