Oat Porridge (Bubur Oat)

 Healthy and filling breakfast..... This is one way of preparing delicious oatmeal breakfast and suitable for all range of age from toddlers to adults. My hubby, sons and Liana all like it.This is one of our regular menu for breakfast.

Serves: 5-6 persons
INGREDIENTS:
1 packet (200g) Instant Oatmeal
1 Chicken Breast - minced 
1 Carrot - diced into tiny bits 
4 cloves Garlic - chopped 
Salt & Pepper
Garnish - Fried Onions, Chili, Spring Onion

METHOD:
1. Heat up few tbsp oil  stir fry garlic until golden.
Add in chicken & stir until well mixed.
Add in 2 liter of water, salt & pepper.
Cover & let it boil & simmer for few minutes.

2. Add in oatmeal & let it boil.
Serve immediately with garnishes.

Hidangan: 5-6 orang
BAHAN2:
1 peket (200g) Instant Oatmeal
1 keping Dada Ayam - cincang halus
1 btg Karot - kiub kecil
4 ulas Bwg Putih - cincang
Garam & Lada Hitam Tumbuk
Bahan Tabur - Bwg Goreng, Cili, Daun Bawang

CARA2:
1. Panaskan beberapa sudu minyak & tumis bwg putih sehingga perang.
Masukkan ayam & gaul sebati.
Masukkan 2 liter air, garam & lada hitam.
Tutup sehingga menggelegak & masak beberapa minit lagi.

2. Masukkan oatmeal & didihkan.
Hidangkan segera dgn bahan taburan.

Chicken Nuggets

I made soya bean juice again and there are some residue which somehow I don't want to waste. I read somewhere that you can add to minced chicken to make nuggets. Here what I made by trial & error and turned-out very good - crunchy and tasteful nuggets. I fried some half-cooked and freeze for future consumptions.

INGREDIENTS:
400g Minced Chicken Meat
150g Soya Bean Residue
3 cloves Garlic
1-2 tbsp Flour
1 tsp White Pepper
Salt
Breadcrumbs - for coating

METHOD:
1. Mix all ingredients except breadcrumbs.
2. Press the chicken mixture into a cookie cutter.
Coat with breadcrumbs.
3. Deep fry until golden.

Bahasa Malaysia
BAHAN2:
400g Daging Ayam yg di mesin halus
150g Hampas Kcg Soya
3 ulas Bwg Putih
1-2 sb Tpg
1 sk Lada Putih
Garam
Serbuk roti

CARA2:
1. Campur kesemua bhn2, kecuali serbuk roti.
2. Tekan ke dlm acuan biskut.
3. Sadur dgn serbuk roti.
4. Goreng sehingga keperangan & masak.

Healthy Natural Rock Salt

I'm trying to switch into a more healthy salt consumption and this is what I have chosen. What's written at the back of the packet attracts me:

"This Rock Salt  or known as Saindhav salt is mined from ancient salt deposits, formed over millions of years, found on the mountains of the Himalayas.  Shielded from impurities and pollutants, it is the purest salt known to man. It is naturally fortified with 84 trace minerals that give the brand its unique properties and flavour.

Himalayan Rock Salt, unlike sea salt, is naturally free flowing and lower in sodium content. It is a 100% vegetarian salt that is completely chemical free. Himalayan Salt is natural and selected with great care for your cooking delight."

I put one granule on my tongue and it does not taste stingingly salty like the typical sea salt i.e. I can stand its level of salty taste. However, to my surprise a small amount added to cooking has quite a strong effect on taste. So I decided to stick to this choice in the future although this will cost me multiple times more than the ordinary salt.

If anyone of you ever tried this salt or know more about it, please share with me.

Fried Onions

I usually made fried onions in a small batch, just enough for one serving but tonight I made one big plate of it.... Why? It is part of my preparation for a big cooking project coming up this Friday.... wait & see to find out more what I will do with it.

This is how I made my fried onions (very crispy & sweet):
Slice shallots thinly & add 2-3 tbsp of rice flour. Deep fry above medium low fire until golden & crispy. Dish up & ensure completely cool before storing in an airtight container.

Dulce de Leche (Again)

My first attempt on this was using sweetened creamer when I couldn't find any condensed milk in the supermarket. Today, a kind viewer was caring enough to leave a comment on the post to inform me that he found F&N condensed milk at Carrefour. I was so excited and hoping I could find it this time and to my surprise I found a couple of brands selling the real condensed milk! Thanks so much to that person who cares enough to inform me...! I finally got to taste the real Dulce de Leche and yes... it is so much tastier & creamier than using sweetened creamer.... wait till I make something out of this.

For small can, you can put it up but I used bigger tin and hence lay it down as such to ensure fully covered by water.
Cover & boil, then slowest heat to simmer for 3 hours. Cool completely before opening the can.

Dulce de Leche

I was so excited when I saw Wendy's step-by-step method on how to make Dulce de Leche (pronounced "Dool-say De Leshay") which in English means toffee or caramelised milk. I have a book on how to make this but I was not so confident to try as it sounds too cumbersome but Wendy showed a very simple way to make this although a very time consuming.

The recipe calls for condensed milk but in Malaysia you can only find sweetened creamer. Since I was so excited about it I gambled with two cans of sweetened creamer hoping something good to come out. I thought one can is a waste of three hours gas burning so might as well gave it a try for two cans straight away. It turned out okay with golden colour but not as creamy as the one uses condensed milk. Taste wise was also ok but I imagined it will be tastier with real milk.

If you want to know what I will do with it, just watch out for my next posting.

HOW TO MAKE DULCE DE LECHE:
1. Place overturned a small wire rack at the bottom of a pot.
2. Peel off the paper wrapper around the can of condensed milk & place the can/cans on the rack.
3. Fill the pot with water until the cans are covered with water. Make sure the pot is tall enough so that water level is not more than 2/3rd of the pot depth.
4. Cover & boil. Lower the heat to the lowest possible & let it simmer for 3-4 hours.
The longer you cook it the darker the color will be. Refill water if necessary but I did not have to because the water remains above the can until the end.
5. Cool completely before opening the can. Opening it while still hot may cause burning on your skin.

Warning: Do not leave the cooking unattended. Cooking above big fire can cause the water to dry up and risk of the can exploding (that's what I learnt from reading other's experience)

See the type of pot I used which is a semi-pressure pot. The method above uses ordinary pot but I thought the pot below will be good to avoid too much steam escaping and I was right.

Ukak (Sarawak Durian)

 Ukak is a type of Durian found in Sarawak. The main distinction to typical Durian from Peninsular is that its vivid orange flesh firm to touch, smaller size and it has hair around the stem. The taste is almost similar to typical durian with its infamous stench. Now is durian season in Sarawak & manage to fetch some Ukak on the way home from my hubby's kampung.

Baby Liana First Solid Feed - Avocado Puree



The child specialist doctor that we saw yesterday advised that it is time for baby Liana to start on her solid food. I decided to start her with Avocado puree. The reason I chose it because I want to start my baby with something natural & prepared at home instead of the bottled or processed food. Avocado makes a great first food for baby due to its texture and creaminess as well as its high nutrient content.

The first time introduction was 1 tsp & Liana's reaction was positive. She enjoyed it very much which I can tell from her kicking & smiling reaction.



RECIPE:
Buy medium soft avocado.
Peel avocado & grate the flesh with the finest grater.
Grate just amount needed (1 tsp for the first introduction). 
It is now ready to be fed to baby.
